Here are three exciting recipes for your family!

Watermelon mint salad

Ingred ients

  • 8 cups of cubed watermelon
  • ½ cup or more if desired of fresh, torn mint leaves
  • ½ cup of crumbled feta cheese (optional)
  • Juice of 1 lemon
  • 2 tablespoons of raw honey
  • Pinch of salt

Directions

  1. In a small bowl whisk together the lemon juice, salt and raw honey.
  2. Toss your watermelon with mint and lemon juice mixture and serve.
  3. Tip:you can also do this with grilled watermelon by simply placing watermelon slices on the grill for a couple of minutes on each side for flavoring before cubing.

Ginger sesame baked tofu 

Ingredients 

  • 2 inches fresh, minced ginger 
  • 4 cloves minced garlic 
  • 1 large, sweet onion chopped finely 
  • 1 block of extra firm tofu, frozen then thawed out 
  • 2 tablespoons low sodium tamari 
  • 2 tablespoons sesame seeds 
  • 2 tablespoons maple syrup 
  • 2 tablespoons coconut oil 
  • ¼ cup orange juice 
  • 2 teaspoons black pepper 
  • 2 teaspoons red pepper flakes 
  • 1 cup fresh green chives chopped finely for finishing 

Directions 

  1. Preheat oven to 350F 
  2. Melt coconut oil and whisk together with maple syrup, orange juice and tamari 
  3. Stir in red pepper flakes and black pepper 
  4. In a large mixing bowl add all ingredients and shake/stir up well 
  5. Pour all ingredients except for fresh chives onto baking pan and bake for 25 minutes, flipping halfway through. 
  6. Serve over rice with fresh chives on top. 
  7. Tip: can be saved overnight and used the next day in a wrap with fresh grated carrots, hummus, sprouts and pickled radishes.  

Maple sweet potato fries with avocado dip 

Ingredients 

For fries:  

  • 5 large sweet potatoes, cut into long sticks 
  • 4 tablespoons maple syrup 
  • 4 tablespoons melted coconut oil 
  • 2 teaspoons chili powder 
  • ½ teaspoon cayenne pepper if desired 
  • 2 teaspoons coarse sea salt 
  • 2 teaspoons black pepper 
  • Juice of 1 lime 

For sauce: 

  • 3 large avocados 
  • Juice of 1 lime 
  • ¼ cup coarsely chopped cilantro or parsley 
  • 1 teaspoon cumin 
  • 1 teaspoon sea salt 
  • 1 teaspoon black pepper 
  • ¼ chop chopped red onion 
  • 2 cloves minced garlic 

Directions 

For fries: 

  1. Preheat oven to 350F 
  2. Toss potatoes with all other ingredients in large bowl until well coated 
  3. Lay fries on greased baking sheet 
  4. Cook for 35 minutes, flipping halfway through. 

For dip: 

  1. Mash avocados into a bowl, stir in chopped onion and garlic, add all other ingredients, and stir together well. 
  2. Put mixture into the Vitamix and puree. 

Serve hot! 

Tip: you can mash the leftovers and fries as sweet potato patties the next day for lunch!
